Our Story

The story of the Eats on 8th began in 2008 when Pat Mullins met a pair of chefs in the Austin restaurant scene who had a talent for evoking rich flavors from simple ingredients. Fast forward to 2014 and the dream became a reality in Georgetown, Texas (The 4th fastest growing economy in the nation!) with Eats on 8th opening in October.

Our Executive Chef Isaac comes to us with a wealth of knowledge and expertise gained from some of the most well-known restaurants in Austin, Texas. His passion for great food, great experiences and great people are evident in his attention to detail, intense energy and humble manner.

The Eats on 8th passion is to create a unique dining experience that focuses on flavor. Using only the freshest ingredients from local growers, we strive to create a unique "farm-to-table" experience that will fill your belly and warm your soul.
